I live in WNC too. I don't think there is a better place in north america to ride this thing out. Just start learning all the plants you can eat (our area has more biodiversity anywhere other than the rain forest) and meet some people doing the local/sustainable thing, which there are plenty of around here. You and your family are going to be fine.
