You aren't kidding -- you are sooooo right!! I just discovered that Bulk Barn sells spelt flour -- perfect for my Galactic doughnuts.

I'm not really selling the doughnut, but the empty space in the middle of the doughnut -- now that's where resides the true consciousness of the Galactic Doughnut :-)
