Really fascinating thread - I have worked intimately with gems and minerals on myself and clients. Before I saw otherwise, I didn't believe that crystals could ever help. I was shocked and started to learn more.

Things to consider are the multi-dimensional aspects of infusing water with quartz or any other gem or mineral.

Besides what is already in the water, you will have also placed your own intention into the making of the infusion. It is related to the quantum theory of "that which is watched or witnessed will be changed and influenced."

The devic elemental energies come into play.

Specific gem and minerals will affect to different degrees, subtle body layers and chakras.

Lots of other things contribute to the effect.

Because there are piezo-electric minerals in our bodies that will 'conduct' electrical impulses, it makes sense that minerals will affect us.
